Wine Cap (Stropharia rugosoannulata)


Wine Cap (also known as Garden Giant, Burgundy Mushroom or King Stropharia) This is one of the most magnificent mushrooms, capable of growing to enormous sizes - up to 2feet in diameter, and weighing over 3kg each! Although, for eating, this mushroom should be picked whilst it is still small. The mushroom can be cultivated indoors, but as it relies on interaction with soil bacteria in order to fruit, and because there is a long incubation time between colonisation and fruiting, there are easier and more lucrative commercial crops. Most growers will grow stropharia in outdoor beds - the mushrooms grow extremely well in wood chips, which are often used as mulches, although it will grow equally well on straw. Beds can be innoculated between March and September, and will provide several crops of delicious mushrooms. If the bed is replemished annually with fresh wood chips, mushrooms can be produced from the same site indefinitely. This mushroom has been traditionally grown alongside (actually, underneath) corn - as it forms a very beneficial symbiotic relationsship, causing greatly enhanced cropping. Various experiments have shown that this species is very beneficial to a large number of garden vegetables, and it is thought that the mushroom mycelium associates very closely to the roots of many vegetables, releasing nutrients into the immediate vicinity of the plant roots.
