Button Mushroom (Agaricus bisporus)

This is the common mushroom ubiquitous in Western Supermarkets. Available in many variants, shades and sizes, this is by far the commonest mushroom grown and eaten. This particular strain has been developed for it's pure white coloration, and it's heavy cropping. Like all agaricus variants, this mushroom is a 'secondary decomposer' meaning that it feeds off partially-decomposed organic material. Although it is possible to produce non-manure composts, for the home-grower the best solution is to use strawy horse-manure (eg bedding that has been cleared out of horse stables), that has aged for a few weeks, ideally with regular turning to promote the removal of ammonia which is toxic to this mushroom. If possible, mix a little gypsum with the compost (use builders' plaster), which is very beneficial in reducing contamination and increasing yields. If you get the compost right, you will reap copious quantities of small to medium-sized mushrooms, which are best harvested in the partially-open stage of growth. If you apply a heavy casing layer, yields and numbers will be reduced but under these conditions, the size of the mushrooms produced can be colossal.
