Chicken of the Woods / Sulphur Shelf (Laetiporus Suphureus)

Not to be confused with Maitake ('Hen of the Woods'), Chicken-of-the-woods is a brightly coloured - usually orange - mushroom which has an amazingly good taste, but difficult to describe. Eat young, as they will grow tougher as they age, this is a rare but tasty delicacy.
